Alex Palumbo is the Creative Director for Hey Palu in Edinburgh. A modern Italian bar specialized in Aperitivo and Amaro.

His career started in London in early 2000 where he worked for a series of iconic bars like Eclipse, Cocoon, Momo’s and the award-winning Lonsdale in Notting Hill. Cocktail competitions have been a big part in his career, from the Havana Grand Prix in 2014 where he placed 3rd in Cuba to Bacardi Legacy, Patron Perfectionist, and Diageo World-class in London.

In the last few years, he worked as Drink Development for companies in London, Brighton, and Edinburgh being responsible for conceptualizing original bars and training programs for new openings. Now with the opening of his new bar, Hey Palu, he is sharing the love for amaro and Italian bittersweet liqueurs.
