New Norfolk Distillery is Tasmania's premier rum dedicated distillery.
The distilling facility and cellar door is located within Willow Court, a former hospital and asylum complex of deep historical significance to the Derwent Valley region. The town of New Norfolk, where the family lives, is only half an hour's drive from Tasmania's capital city, Hobart.
Since 2019, New Norfolk Distillery have made their own ferments (predominantly molasses based), and distilled, bottled and aged their spirits on site. The small team now produces a range of modern rums, gins, liqueurs and other tantalising tipples.
