Green Cask Distilling was founded in 2023 by two long-time friends passionate about distillation and the development of unusual liqueurs and spirits. Obsessed with the weird and wonderful, the two founders, Tom and Paul, began experimenting in a dark mezzanine located in a warehouse in an industrial estate in Kensington near Melbourne’s CBD a decade before the company was founded. Paul, a biochemist, brewer and distiller, and Tom, an entrepreneur and expert in commercial refrigeration, decided in 2023 to share their creations through the official launch of Green Cask.

Green Cask is a small craft distillery that focusses on a range of left-of-centre spirits including gins, rums, whiskies, brandy spirits and liqueurs, such as vermouths and bitters. With only 200 litres distilling capacity, the focus is on quality and crafting each product to be unique. Green Cask is dedicated to constant innovation, with a significant portion of time dedicated to R&D. Gins that celebrate more unusual botanicals and methods of production, offer customers something a little different. With numerous whisky and rum products under small format cask, and vermouths and bitters in larger format ex-wine casks.
