The company Caucasus Spirits LLC was established on 2022. We produce hand-crafted Honey Spirit in small batches and our goal is to produce only premium quality products, to be outstanding in terms of quality, aroma and taste.

Our history is inseparable from the Caucasus Mountains and the abundant opportunities they have brought – forever intertwined not only with country climate, but also with the society, heritage and soul of Georgia.

Georgia is a homeland of the world known Mountain Grey Caucasian Honey Bee (Apis mellifera caucasica-Georgia). The complex climate and the vast biodiversity of flora of Georgia has led to the evolution of the breed and has given it extraordinary characteristics, making it unique compared to other honeybee breeds. The breed has the longest tongue among honey bee species, which gives it the ability to reach the nectar tissues, where no other species can.

We are proud that the history of honey cultivation in Georgia dates back at least 5,500 years, making it the oldest recorded honey cultivation. A great example of continuing this heritage is the local beekeepers, whose selection process was conducted, and long-term cooperation with them ensures a steady supply of 100% natural mountain flowers honey with the best taste qualities."

SOMEL is a Spirit using only natural honey as the primary fermentable substrate, which represents the remarkable blend of human and nature mastery. SOMEL is crafted from finest Georgian mountain flowers honey and distilled using the exclusive MULLER AROMAT pot still. After distillation, the honey spirit rests for no less than 6 months in stainless steel tanks to allow the various components to rebalance.
