We would like to present and bring to your attention our Farm, born from the will of Andrea and Davide Pedinelli, father and son, who, in a conjunctural moment of their lives, decided to join forces on a wide-ranging project and that had, as its fundamentals, the richness of what nature offers in a religious respect for it, convinced as we are that quality comes from care and respect for the earth.
At the end of 2022, Andrea took his leave from a long managerial career, first as Chief Financial Officer and then Head of Procurement in the no-food GDO and, shortly before, Davide graduated in Business Administration from the University of Pisa: together they gave life and governance to this company, they set themselves challenging goals in the conviction of not limiting themselves to a mere cultivation of olives and lavender but of starting from these to structure a path of growth and innovation of products where nature is the undisputed common denominator.

OUR COMPANY'S PRODUCTS
From our approximately 500 OLIVES of Maremma we produce the Extra Virgin Olive Oil “Vista al Poggio”, certified since 2023 Protected Geographical Indication (PGI) and always introduced since last year, along with the cultivation of lavender, in the conversion path to obtain organic certification. In fact, we are subjecting the company to a three-year period of rules and strict controls by a supervisory body that oversees the correct application of the European Regulations and reference legislation.
The oil is produced from the pressing of olives harvested by hand at the beginning of veraison that come mainly from the Frantoio and Pendolino varieties. It is clear and dense, between golden yellow and bright green. It is rich in intense herbaceous and vegetable fragrances that dominate the sense of smell along with delicate notes of dried fruit that complete the bouquet of aromas. When we bought it, the olive grove had been abandoned for some time, so in these first two years we had to implement severe pruning interventions to restore the well-being of the plants and put them back in order, we are confident that this year's production of just under 2 tons of olives obtained substantially from less than half of the plants (the more mature ones) can triple within the next 2/3 years.
The oil produced is used to enhance the menu of our agri-restaurant and, for the moment, sold in 0.75lt bottles through our social channels and in the restaurant itself. Another flagship crop is LAVENDER, with which we have embarked on a path that is certainly innovative compared to its better-known use in cosmetics, namely that of alcohol production. In 2023, on the occasion of the opening of our agribar in fact, we presented the first product “Lavender Dry Gin” made by distilling the first harvest of the flower that, together with juniper, myrtle and leaves of our olive trees make up the bouquet of aromas that give the final product a pleasant olfactory complexity. Thanks to the surprising result of Lavender Dry Gin, we thought we would go further by pushing ourselves, this year, to make “Lavender Flower Bitter,” a liqueur infused with floral notes of lavender complemented by a bouquet of bittering myrtle and leaves of our olive and pine trees that give an elegant olfactory and gustatory complexity, very special and out of the box.

Both products are the result of a long work developed together with specialists in the world of spirits who believed in our project and put at our disposal production plant and skills for the success of the project of which we are really very proud and satisfied given the satisfaction they meet. In fact, the production of both products-which translates into a little more than 1k liters of gin and 0.7k liters of bitter-is substantially finished well before our wildest forecasts so much so that a second production of both was necessary during the year. Although the supply basin, for 60%, has been local because they are offered in our agribar in Scarlino, the sale of the remaining 40% has been to customers, mainly tourists from Italy, Austria, Germany, Holland, Belgium and the United States, and it is starting from these countries that we would like to try to include them in their target markets. Specifically: we have done some in-depth studies, e.g., on the habits of Americans from which it emerges that they are increasingly attracted to the ritual of the aperitif, which they see as a time to slow down frenetic rhythms and enjoy free time. Moreover, even more interestingly, overseas industries are noticing that consumers' palates are beginning to evolve, showing an appreciation for drinks with a more bitter finish than traditionally sweet ones, and our bitter goes precisely in the direction of that change. Alcohol consumption in Europe, on the other hand, is much more distributed than the aforementioned: posing, of course, a linear presence of wine and beer consumption that is almost present in many countries of the Union, a recent study places Lithuania, Estonia, Latvia, Finland, Iceland, Ireland, Luxembourg and Malta at the top for consumption of spirits, followed, albeit with differences, by the others. European countries, therefore, also appear to be a decidedly interesting market for our products, which, served neat or blended, appeal to a variety of palates and tastes. Gin is a juniper-based spirit that is obtained through the infusion of its berries in grain alcohol; the Reference Market offers a very wide proposal of products with additional variants so much so that we have to say that the particularity of our Gin and Bitter is so niche that it inspires us to look for these new markets to enter the industry competition with a proposal different from the mass of basic and contextually highly appreciated versions. A new Gin is also in the works for 2025 that, although different from the first one, will not only remain faithful to the products we grow but also to the same values that have so far helped and guided us to achieve results of full satisfaction.

THE SECRET GARDEN AGRIBAR & BARBEQUE
With the same principles and values that have guided us to ground the above projects, we thought of connecting to the agricultural activity that of our Secret Garden Agribar & Barbeque: after taking over a small plot of land, abandoned for more than twenty years and where nature had taken its course turning it into a small forest full of brambles, trees and olive trees choked with vegetation, dirt, etc.etc., we set to work and transformed it into what is now our little great jewel of nature. On three sides it is surrounded by adult Pine trees, which, after a restoration operation and 10 bales of residue from cutting removed have returned to their majesty. However, its location presented itself as strategic and we decided not to give it up while being aware of the much work this presented.
Months of labors and companies involved in the work have allowed this corner of nature to shine today divided in half between agribar and restaurant part through which we offer our guests a taste experience closely linked to our beautiful territory where we strive to enhance a selection of local excellences from small producers in our areas or from our garden. Given that Tuscany is the largest producer of gin in Italy, in our AgriBar it is possible, in addition to our products, to taste numerous varieties, all from Tuscan soil, produced with equally regional raw materials and which we serve with tonic or lemonade that are also local. Even with AgriRistoro we devote 100 percent of our attention to enhancing Tuscan recipes and products, reserving the place of honor for the meat that we offer mainly cooked on the grill and obviously also locally sourced. This is our brief and concise history that we bring to your attention in order to understand if it is possible to establish a synergy that may allow us to continue to cultivate our projects also towards markets and territories to reach which we believe expertise and skills are necessary that we hope to find in your support and interest in our growth projects.
