Gin

This gin comes from a farm high in the Blue Mountains 65km west of Sydney. Here we grow 2,500 Australian native Finger Lime trees. Finger Limes are a small Australian rainforest tree and the fruit (shaped like a finger) has individual vessicles like caviar which pop in your mouth when you bite them. Over and 18 month process we grow the finger limes and gently extract the finger lime caviar. We then infuse these in their own gin so the contents of each little vessicle contain 40% alcohol. We then distill kaffir lime and tahitian lime leaves and a special type of orange called a navelina all of which are grown on our farm. We make the final gin and then add the finger lime caviar so that they magically suspend in the gin and have a mesmerising appearance. when served in a gin and tonic the little pops of finger lime enter the mouth and when you bite them you get a tiny burst of aromatic 40% alcohol gin which is different to the gin they are suspended in. So in effect there are 2 different gins inside the bottle. Unique in every way and from our farm to you!
