Pete had always had a bit of an obsession with gin – Rachel an obsession with the landscape and environment of the south west of Western Australia.  Pete thought it might be fun to explore the concept of place and make his own gin based on native botanicals.  Rachel thought it would be fantastic to try to save just a small part of our native fauna. And so Black Cockatoo Distillery was born.

 

 

Black Cockatoo Distillery is inspired by a love of gin and a deep connection to the distinct and precious environment we call home – the Southwest of Australia.  Each gin captures a different flavour of the southwest, these are gins to be savoured and enjoyed by those who seek a lovingly crafted gin.  All of Black Cockatoo’s gin is handcrafted by our Master Distiller Pete on the edge of the Blackwood Forest.  Our gin is produced in small batches using the traditional vapour infusion method through the use of a copper still with the alcohol being forced through the botanicals.  A slow, gentle distillation process ensures the local flavours emerge resulting in a high quality gin.

           

All purchases of Black Cockatoo contribute to protecting a distinct part of the environment of the Southwest of Australia. As a business we have a responsibility to the environment that provides the ingredients for our gin and so future generations can experience the wildlife and forests that we love.  Black Cockatoo Distillery donates 10% of all profits to support the work of Karaakin and their important work in creating a sustainable future for the different endangered black cockatoo species.  Kaarakin Black Cockatoo Conservation Centre is a specialist wildlife centre located in Perth, Western Australia, dedicated to the rescue and rehabilitation of sick and injured wild native black cockatoos. Once rehabilitated, at Kaarakin the cockatoos are then released back into the wild.

 

All of Black Cockatoo’s gin’s are crafted with native ingredients as part of their recipe.  We source almost all of these ingredients from Mark and the team at Tucker Bush in the Perth Hills.  Tucker Bush are a local grower of Australian Native edibles who are passionate about Australian species and helping young people connect to their food and its supply. All their produce is grown organically and they currently supply restaurants such as Wildflower, Mandoon Estate, Mother Fremantle and Will Street with their fresh produce.  Love the pink colour of our Bush Berry Gin?  That’s Mark’s rosella flowers at work!  The citrus comes from our own trees and Rachels sister Mary harvests her lilly pillys for the Bush Berry Gin,  Low food miles are the aim here.
