Bimber Distillery- Inspired By Tradition

Distilled, bottled and labelled at their site in Park Royal, West London they use only natural ingredients and traditional methods to craft a unique range of spirits

The distillery was founded in August 2015, with their first vodka bottling in early 2016. their two alembic copper stills (Doris & Astraea) take pride of place at the heart of their London site.

Bimber Distillery takes its name from the Polish for moonshine, in honour of their founder’s heritage, and befitting their refined, innovative take on spirits.

Doris & Astraea are currently kept busy distilling one of the first Single Malt Whiskies to have been made in London for a century, which will launch in June 2019.

OAK AGED VODKA: Challenging everything you thought you knew about vodka, their Oak Aged Vodka combines the toasted influence of Ex-Bourbon casks with the spices more commonly used to enhance rum. This infuses the delicate character of their spirit with rich, fruity aromas and warming spice.

Bimber Oak Aged Vodka is a four-times distilled 100% wheat spirit which is aged in Ex-Bourbon casks and infused with a secret mix of spices for a delicate, smooth taste.

CHERRY INFUSED VODKA: Taking inspiration from Polish “Nalewka” they have brought infused vodka into the 21st century, using the finest wheat vodka and infusing it with a variety of fresh fruit and carefully selected spices for up to eight weeks.

Bimber’s cherry infused vodka are made with a four-times distilled wheat spirit, which is rested with the Cherries for up to eight weeks, before filtered and bottled at the distillery.

BLACKBERRY INFUSED VODKA: Bimber’s Blackberry infused vodka are made with a four-times distilled wheat spirit, which is rested with the Blackberries, Vanilla and Cloves for up to eight weeks, before filtered and bottled at the distillery. No artificial flavours or additives just pure, homemade taste delivered in small batches.

LONDON DRY GIN: Bimber London Dry Gin is a stand-out classic – striking the perfect balance between bright juniper; orange and lemon citrus freshness, nutty coriander seed, Fragrant angelica root, and warm cinnamon. The finish is dry and earthy, with hints of cassia & liquorice. It has remarkable persistence, which delivers the individual character of their ten botanicals in waves that lap across your palate.

SUMMER FRUIT VODKA: Bimber’s Summer Fruits infused vodka is made with a four-times distilled wheat spirit, which is rested with the Strawberry, Raspberry, Blackberry, Cherry, Redcurrant and Blackcurrant for up to eight weeks, before filtered and bottled at the distillery.

BLACKCURRANT INFUSED VODKA: Bimber’s Blackcurrant infused vodka is made with a four-times distilled wheat spirit, which is rested with the Blackcurrants, Cinnamon and Cloves for up to eight weeks, before filtered and bottled at the distillery.

ENGLISH BARLEY VODKA: Distilled from the finest English Barley, the result is a wonderfully smooth and buttery vodka that is nuanced with nutty, fruity notes and an extraordinarily soft mouth feel. A delicious expression that proves vodka can deliver flavour and character when distilled with care and attention.

BIMBER LONDON SINGLE MALT WHISKY: Inspired by the traditional process of double distilling in copper stills, Bimber distils a unique malt whisky of genuine character and refined quality.

Here their process is described in detail, from grain to glass, so you can see exactly what makes their whisky so special: From their 100% English Barley, sourced from one of the country’s only remaining traditional maltsters, to their gentle fermentation, precise distillation, and maturation in four completely different cask types. The first batch due for release in 2019.
