In an increasingly crowded premium spirits market, differentiation is becoming harder to achieve. Consumers and trade buyers alike are looking beyond category conventions, seeking brands that offer authenticity, provenance, craftsmanship, and a genuine connection to place. Mallorca Distillery has built its entire identity around that opportunity.

Founded in 2018 by Byron and Amber Holland, Mallorca Distillery was born from a simple observation: despite Mallorca's global reputation for gastronomy, agriculture, and tourism, there was a noticeable absence of premium craft spirits that truly reflected the island itself. Recognising the rise of craft distillation and the growing consumer appetite for locally rooted products, the founders set out to create spirits that would capture Mallorca's landscape, culture, and biodiversity in liquid form.

Today, operating from Palma de Mallorca, the company has established itself as the island's first organic craft distillery, producing a portfolio of award-winning spirits that are deeply connected to their Mediterranean origins.

As Elena Boza, Operations Manager at Mallorca Distillery, explains, "Capturing Mallorca is about translating the island's landscape, climate, and culture into the flavour of our spirits. For us, that means foraging botanicals that grow naturally here, working with local organic farmers, and designing recipes that reflect Mallorca's character."

That commitment begins with sourcing. Mallorca's unique geography provides an extraordinary range of botanicals within a relatively compact area. Coastal vegetation, citrus groves, mountain herbs, florals, and native plant species all contribute to the distillery's flavour palette.

"All within a relatively small area, Mallorca has an unusual combination of sea air, intense Mediterranean sunlight, mountain terrain, mineral-rich soils, and a diverse microclimate and biodiversity," says Boza. "That diversity creates flavours and aromas that we are able to distill into our gins that are difficult to replicate elsewhere."

Those ingredients are transformed inside the distillery using a bespoke 500-litre Spanish copper pot still named Luna. Production follows a carefully managed London Dry methodology, balancing traditional techniques with meticulous quality control.

Fresh citrus peels and organic botanicals are slowly heated and macerated in organic wheat spirit for up to 24 hours before distillation, allowing depth and structure to develop naturally. More delicate ingredients, particularly floral botanicals, undergo separate vapour infusion to preserve freshness and aromatic complexity.

Unlike larger industrial producers, Mallorca Distillery intentionally prioritises flavour extraction and texture over production speed.

"Our spirits are produced in small batches," explains Boza. "We prioritise flavour extraction from fresh, rather than dried botanicals, texture, and balance over efficiency. Each batch is then rested, chill filtered for clarity, and hand bottled on site."

The result is a portfolio that offers multiple interpretations of Mallorca while maintaining a cohesive identity.

Palma Gin remains the flagship expression and best-selling product, recognised for its fresh citrus profile, floral balance, and smooth earthy finish. Palma Vodka, recently awarded Double Gold and Country Winner at the London Spirits Competition 2026, incorporates Flor de Sal sourced from the renowned salt pans of Es Trenc, creating a distinctive mineral character and exceptional smoothness.

Alongside these core expressions, the portfolio includes Palma Citrus Gin, Palma Spiced Gin, Palma Rosé Gin, and the annual limited-edition Palma Monastrell Gin, inspired by the island's winemaking heritage.

For distributors and retailers, the range offers flexibility across multiple channels, from premium retail and specialist spirits shops to cocktail-focused hospitality venues, luxury hotels, gifting programs, and tourism-driven markets.

Beyond the liquid itself, Mallorca Distillery has invested heavily in creating a brand identity that reflects the island's cultural heritage. The bottle design draws inspiration from traditional Mallorcan hydraulic floor tiles handcrafted by a local family business that has operated on the island for more than 80 years. The company logo references the iconic rose window of Palma's La Seu Cathedral, one of Europe's most celebrated Gothic landmarks.

The same attention to authenticity extends to sustainability, which has been embedded into the business from the beginning rather than introduced as a marketing exercise.

The distillery works closely with local organic farmers, uses recyclable packaging and organic inks, has installed solar panels, and continually seeks ways to reduce waste and emissions throughout production. Even spent botanicals are returned to local farmers for use as animal feed.

"Sustainability has been built into the company from the beginning rather than added later as a marketing exercise," says Boza. "It has to go far beyond visible measures like solar integration or recyclable packaging."

That philosophy aligns closely with wider trends currently shaping premium spirits markets worldwide. Consumers increasingly want products that are connected to craftsmanship, lifestyle, travel, and meaningful experiences. Provenance has become a powerful commercial asset, particularly in categories where many brands struggle to stand apart.

"We are seeing the market increasingly move towards more authentic spirits that feel connected to lifestyle, travel and genuine experiences," Boza notes. "People are looking for products with real stories, craftsmanship, unique flavours and a strong sense of place."

For trade buyers evaluating opportunities in the premium craft spirits sector, Mallorca Distillery offers a combination that is becoming increasingly difficult to find: award-winning liquids, authentic Mediterranean provenance, strong visual identity, sustainable production practices, and a clear sense of purpose.

As the brand continues its international expansion, its ambition remains firmly tied to the island that inspired its creation.

"We are not simply making spirits in Mallorca," says Boza. "We are making The Spirit of Mallorca."

In a market where consumers increasingly buy into stories as much as products, that distinction may prove to be one of Mallorca Distillery's greatest strengths.
