Western Tiers Distillery Talks About Crafting Tasmania’s Spirit, Blending Heritage and Craftsmanship

Discover how Western Tiers Distillery blends the rugged beauty of Tasmania with expert innovation to create award-worthy spirits

Western Tiers Distillery is a celebration of Tasmania’s craftsmanship and natural beauty. Situated in the heart of the Great Western Tiers, this distillery is more than just a producer of fine spirits—it's a tribute to the rugged landscape and the community it represents. From their panoramic Cellar Door to their award-worthy spirits, Western Tiers Distillery blends tradition, innovation, and passion into every bottle. Their gins and vodkas pay homage to the region's bluffs and rugged terrain, while their crowning achievement, the Triple Distilled Single Malt Whisky, reflects the patience and dedication that have become synonymous with Tasmania's spirit-making heritage. In this conversation with Tim Freeman, Director of Western Tiers Distillery, we explore the remarkable craftsmanship and dedication driving the success of the distillery.

The Journey

The journey began in 2015 when co-founders Mark Kolodziej and Tim Freeman, through their fabrication company Kolmark, were tasked with crafting a Copper Pot Still for a local distillery. This project sparked a vision to become the leading supplier of distillation equipment in the Southern Hemisphere. In 2016, they launched Stillsmiths Tasmania, specialising in quality distillery equipment. However, Mark and Tim decided to showcase their craftsmanship by building a working distillery as well, which evolved into the Western Tiers Distillery. Situated beneath Quamby Bluff, the distillery’s name is a natural tribute to the stunning landscapes of the Great Western Tiers. In March 2021, they opened their doors to the public, offering a Cellar Door experience unlike any other, where visitors can not only enjoy their premium spirits but also see the distillation process firsthand.

Authentic Craftsmanship

At Western Tiers Distillery, the commitment to excellence shines through in every spirit they create. From gins inspired by the region’s bluffs to vodkas named after Wild Dog Tier, each product tells a story of Tasmania’s unique environment. The true star, however, is their Triple Distilled Single Malt Whisky, crafted with the same patience and care that has made Tasmania a destination for whisky lovers around the world. This whisky reflects the dedication to traditional methods combined with the precision of modern distillation. For Tim and Mark, their spirits are more than just products—they are an invitation to savour life’s finer moments, whether shared with friends or enjoyed in the quiet appreciation of nature.

Competitive Edge

Western Tiers Distillery sets itself apart with a commitment to quality that extends beyond the spirits. As both distillers and fabricators, Mark and Tim’s deep understanding of the distillation process allows them to innovate continuously. Their distillery also serves as a research and development hub where they test equipment and refine techniques, ensuring that each batch meets the highest standards. Sustainability is also a core focus. Through energy-efficient practices and waste reduction, they’ve minimised their environmental footprint while maximising quality. This combination of craftsmanship, innovation, and sustainability positions Western Tiers Distillery as a leader in the industry.

Growth and Vision

Western Tiers Distillery is focused on growing its presence in Australia before venturing into international markets. Their immediate plans include promoting their three whisky releases while continuing to innovate in both product development and sustainability. With a commitment to expanding their range of premium spirits and further integrating into the Tasmanian community, Tim and Mark’s vision is clear: to make Western Tiers Distillery synonymous with quality, authenticity, and responsible business practices.
