Agave spirits, like tequila and mezcal, are getting really popular worldwide. Tequila, made from a plant called Agave Tequilana, saw a massive increase in production in Mexico from 181.6 million to 374 million liters in recent years. With 100% Blue Agave Tequila alone shot up from 25.1 million to 228.3 million liters—that's nine times more!

Because of this, stores are thinking about offering more agave-based spirits from Mexico and other countries. In 2022, agave spirits became the second-fastest-growing category, and it's expected to be worth $1,388.1 million by 2027. Because of this growth, stores plan to give more space on their shelves to agave spirits in 2024.

Tequila is the biggest part of agave spirits and is becoming more popular globally with a 7% increase in sales each year from 2021 to 2026. People are also trying new things with agave plants, not just in Mexico but in places like Europe, China, India, Japan, and the United States.

Some brands are getting creative with agave spirits, using plants from different countries to add unique flavors and stories to their drinks. However, with all these different things on a platter,, the process of making agave spirits is quite similar for all types. They pick the agave, remove the leaves, cook the middle part (piña), crush or shred it, and then ferment and distill the juice, sometimes with crushed fibers.

People have their own ways of doing things, with different stills made from steel, copper, or even tree trunks. Cooking methods vary from big factories to brick ovens or holes in the ground. Each producer figures out their unique approach through lots of experimenting, sometimes passing down and adjusting methods over generations. This diversity is what makes Mexico's spirits so fascinating for drink enthusiasts.
