London Spirits Competition chats with Matteo Aristei on his bartending journey and what he thinks are the essential skills for a Bartender.

Meet Matteo Aristei, one of the leading Bartenders from London. He currently works at the 14 Hills which offers a range of delicious Modern British dishes with an amazing wine and cocktail list.

He started working in a bar at the German Gymnasium back in 2018. In those days, the department was made up of passionate very good, and knowledgeable bartenders who instilled in him a love for the job.

Here’s a conversation between the London Spirits Competition and Matteo Ariste.

What training or education did you receive to become a professional bartender?

When I started, I was a barback. I began studying classic cocktails during my days off and practiced and spoke with the bartenders.

What are the essential skills every bartender should possess?

Every bartender should possess the following essential skills:

1. Mixology Knowledge: Understanding how to prepare a variety of drinks.
2. Customer Service: Providing friendly and efficient service.
3. Communication: Interacting clearly with customers and colleagues.
4. Multitasking: Handling multiple orders simultaneously.
5. Attention to Detail: Ensuring drink accuracy and cleanliness.
6. Problem-solving: Addressing customer issues quickly.
7. Time Management: Serving customers promptly.
8. Cash Handling: Managing transactions accurately.
9. Health and Safety: Complying with safety standards.
10. Physical Stamina: Enduring long periods of standing.
11. Teamwork: Collaborating effectively with staff.
12. Creativity: Developing new drink recipes.

What do you look for when you plan to buy new products for your business? 

When planning to buy new products for your business, I consider the following factors:

- Price vs. Value Ensure the cost aligns with the quality.
- Quality Look for durable, reliable products.
- Customer Reviews Check feedback from other users.

How do you stay updated with the latest trends and techniques in mixology?

Social Media, networking, and visiting bars.

Can you describe your process for creating a new cocktail? What inspires your creations?

My process for creating a new cocktail involves Seasonal Inspiration Starting with seasonal ingredients to ensure freshness and relevance. Flavor Pairing Experimenting with complementary flavors to create a balanced profile. Technique Deciding on the preparation method, whether shaken, stirred, or blended. Testing and Tasting Refining the recipe through multiple tastings and adjustments.

My creations are inspired by the changing seasons, which influence my choice of ingredients and flavors.

What are your thoughts on the growing popularity of non-alcoholic spirits and low-ABV cocktails?

I think the growing popularity of non-alcoholic spirits and low-ABV cocktails is very nice because it allows everyone to enjoy cocktails, even those who don't drink alcohol. This trend promotes inclusivity and offers more options for health-conscious consumers. It's a great way to ensure that all guests have a memorable and enjoyable experience, regardless of their alcohol preferences.

How do you handle difficult or unruly customers?

When handling difficult customers,

1. Stay Calm Keep composure and don't escalate.
2. Listen Actively Let them express their concerns.
3. Show Empathy: Ensure they know I'm trying to make them happy.
4. Resolve Quickly: Offer prompt solutions.

What are the biggest challenges you face in managing a bar, and how do you overcome them?

One of the biggest challenges is to make every member of the team happy.

How do you see the role of bartenders evolving in the next five years?

In the next five years, I see the role of bartenders evolving to involve less action in front of clients and more preparation and batching behind the scenes. This shift will allow for faster service and consistency. 

If you could only use five ingredients behind the bar, what would they be and why?

If I could only use five ingredients behind the bar, they would be:

1. Vodka: A versatile base spirit that pairs well with various mixers and flavors. (RAMSBURY SINGLE ESTATE VODKA was awarded Vodka of the Year).
2. Gin: Offers complexity and can be used in a range of classic and contemporary cocktails. (UKIYO JAPANESE YUZU GIN was awarded Gin of the Year)
3. Lemon Juice: Provides essential acidity and freshness for balancing drinks.
4. Simple Syrup: A fundamental sweetener that blends seamlessly into any cocktail.
5. Bitters: Adds depth and complexity to cocktails with just a few dashes. (APERITIVO 1814 was awarded Bitter of the Year).

What advice would you give to someone looking to start a career in bartending?

In my opinion, if you're starting a career in bartending, learn the basics, get certified, and gain experience in entry-level positions. Develop strong customer service skills, stay updated on industry trends, and network with professionals.

“Tasting Notes: Cognac with a sharp, fruity palate, featuring orange and spice notes initially. Dry nose with hints of cherry and leather, leading to a silky, long finish. Light and delicate with stone fruit aromas.”
